It’s officially grilling season and these Pineapple BBQ Shrimp Skewers are READY! Now I don’t know if it’s technically the official grilling season yet but when it’s May, in the 70s and sunny… it’s grilling season in our house! Well outside of the house.  Anyways, we are SO pumped for this summer.  We just bought a new outdoor sectional couch and a wonderful and beautiful fire pit for our backyard that I am so excited to start breaking in.  Living in southern california we love to try and enjoy the beautiful weather whenever we can because being in the sun physically makes my heart and soul happier.

Just last week it was sunny and Matt and I were both on the couch while ruth was napping and I said, I think we need to go enjoy the sunshine and play a game.  And of course Matt was down, so we played bananagrams in the sun.  Yes, Ruth woke up about 20 minutes later and we had to stop but STILL!  20 minutes of sun filled my soul up and made me super happy.  So go outside, grill some Pineapple BBQ Shrimp skewers and enjoy your life people!!

Pineapple BBQ Shrimp

Ingredients

Scale
  • 24 peeled & deveined jumbo shrimp
  • ½ cup bbq sauce (i like sugar free brands like primal kitchen)
  • 2 cups of chopped pineapple
  • 24 cherry tomatoes

Instructions

  • In a large bowl combine shrimp and bbq sauce and toss to coat.
  • Take 8 skewers and and line them with 3 shrimp, 3 pieces of chopped pineapple and 3 cherry tomatoes, in any order you like.
  • Turn your grill on high and cook skewers for 2-3 minutes on each side or until shrimp is pink and opaque.
