Ginger Molasses Cookies

Ingredients 

  • ¾ cup vegetable oil
  • 1 cup sugar
  • ¼ cup molasses
  • 1 egg
  • 2 teaspoons baking soda
  • 2 cups flour
  • ½ teaspoon ground clover
  • ½ teaspoon ground ginger
  • 1 teaspoon cinnamon
  • 1 tbsp grated ginger
  • ½ cup chopped candied ginger
  • ½ teaspoon salt
  • Sugar to roll dough in

Instructions 

  • Preheat oven to 375 degrees.
  • Mix all ingredients together until well combined.
  • Scoop dough into balls and roll in sugar to coat.
  • Place balls of dough on a parchment lined cookie sheet and press down slightly.
  • Bake for 8-10 minutes. Let cool and enjoy!
