Ginger Molasses Cookies
Ingredients
- ¾ cup vegetable oil
- 1 cup sugar
- ¼ cup molasses
- 1 egg
- 2 teaspoons baking soda
- 2 cups flour
- ½ teaspoon ground clover
- ½ teaspoon ground ginger
- 1 teaspoon cinnamon
- 1 tbsp grated ginger
- ½ cup chopped candied ginger
- ½ teaspoon salt
- Sugar to roll dough in
Instructions
- Preheat oven to 375 degrees.
- Mix all ingredients together until well combined.
- Scoop dough into balls and roll in sugar to coat.
- Place balls of dough on a parchment lined cookie sheet and press down slightly.
- Bake for 8-10 minutes. Let cool and enjoy!
