Fresh Asian Radish Salad

This Fresh Asian Radish Salad is screaming summer!! All you gotta do is chop some veggies – radishes, cucumbers, carrots and some greens – and toss them with a super simple asian dressing. I am teaming up with Ocean Mist Farms again showcasing their amazing radishes! I love a good radish – chopped on a salad, pickled on my bowl at Cava (my fave lunch spot that happens to use Ocean Mist Farms produce!), or really any way you can dice it! With my due date approaching I am thinking of all the ways to get my veggies in because there is some weird part of my brain that says “EAT ALL THE SUGAR” most of the time these days. So I really have to consciously think about getting my veggies in, which is new for me!
I also have to say that although this is a “fresh” salad recipe, it it also pretty great the next day. After sitting in the dressing, all the veggies soften a bit and get totally packed with flavor. When using radishes though your chopping game should be on point! You can use a mandolin too but I have PTSD from slicing the tip of my finger off with one… so I stick to a very sharp knife instead! There is something really calming to me about chopping veggies while the sun is shining with a good playlist on.. you should try it. I also would say it’s even better while drinking some cold white wine but this pregnant life demands otherwise! Just wait though, in a few months I will be wine chopping it UP! Okay enough of my missing wine… let’s chop some veggies and enjoy our lives.

Fresh Asian Radish Salad
Ingredients
- 1 bunch radishes, washed and thinly sliced
- 1 cucumber, thinly sliced
- 1 carrot, grated
- 3 handfuls shredded kale mix
- 2 tbsp. chopped cilantro
- ¼ cup coconut aminos
- 2 tbsp. honey
- 1 teaspoon ground ginger
- 1 teaspoon garlic powder
- 2 tbsp. sesame oil
Instructions
- Combine coconut aminos, honey, ground ginger, garlic powder and sesame oil in a small bowl and whisk to combine.
- Toss radishes, cucumber, carrot, kale mix and cilantro with the dressing.

Wow this looks so fresh! Going to prepare this tomorrow after work to bring to a bbq swim party. I think a lighter salad like this will go well with the hot hot Fresno, CA temperature:)
