Everyday Green Beans

This recipe came to fruition as most of the greats do.  Dad- “Want to make us a salad to go with the pork?”  Me- “Hmm lets see what else we have… Mom bought some green beans the other day, i’ll cook those up!”

A shallot, garlic clove, green onion, and some bacon later…. a star was born!  I had these ingredients on hand and decided to give it a try.  First I chopped up one green onion, one shallot, and one clove of garlic.

Meawhile, I filled a 4-cup measuring cup to the brim with green beans (about 5- 5 1/2 cups).  I put about 1/2 cup of water in the measuring cup, covered the beans with plastic wrap , cut a 1 inch slit in the top, and microwaved them for 3-4 minutes.

Then I cooked 4 strips of bacon in a saute pan until crispy.  I took the bacon out of the pan and chopped it up.  I then poured out all but 1 Tablespoon of the bacon grease from the pan, and added my garlic, shallots, and green onion.  I let that cook for about 3 minutes on medium low heat, then added the bacon, and 1 Tablespoon of butter.   You can use any oil, but butter and I have a good relationship going.

At this point your kitchen will smell like bacon and garlic and you will have a huge smile on your face.  Once the butter is melted, take off the heat and add green beans.  Toss to coat.

Sprinkle with feta cheese and serve on the side of whatever meat you desire!  This is such an easy and tasty mid-week side dish that is a crowd pleaser.


Ingredients 

  • 5 Cups of Green Beans, washed and trimmed
  • 1 garlic clove, minced
  • 1 shallot, minced
  • 1 green onion, sliced
  • 4 strips of Bacon
  • 1 Tbls. Butter
  • Feta cheese

Instructions 

  • Fill microwave safe bowl with Green Beans and 1/2 cup of water. Cover with plastic wrap, cut 1 inch slit in the top, and cook in microwave for 3-4 minutes, or until cooked. Cook bacon until crispy, remove from pan and chop. Pour out all but 1 Tablespoon of bacon grease from the pan. Add garlic, green onion, and shallot to the pan, and cook for about 3 minutes on medium-low heat. Add butter and bacon to the pan. When butter has melted, remove from heat and add green beans. Toss the beans to coat. Sprinkle with feta cheese. Enjoy!
