These Dragon Fruit Margaritas are naturally sweetened with honey and perfect for a warm summer day!

Cinco De Mayo weekend is upon us so OF COURSE I have a dragon fruit margarita recipe for you!  I was talking with Catherine about a margarita recipe and she said she had a dragon fruit jalapeno  margarita once that was amazing.  I am not a big spicy fan but I loved the idea of dragon fruit because it’s so beautiful!  So we made this super simple cocktail that is naturally sweetened with my fabulous honey syrup. And don’t be intimidated by dragon fruit – I was initially just because I had never bought one.  There are different kinds, one with white flesh & one with pink flesh – get the pink!  I found it at my local albertsons in the produce section with other tropical fruits and it said the flesh color on the label.  All you have to do is cut the fruit in half and scoop out the inside with a spoon.  So easy!  Oh and did you know they actually have some great nutritional content?  Read about it below!

Dragon Fruit Margarita Nutrition:

There are many types of Dragonfruit a.k.a Pitaya.  White, Yellow or Red, all of these versions carry the same nutrient profile. This fruit is considered “nutrient dense”.  Meaning, it has a very low calorie amount (60 calories per serving) but is highly rich in nutrients. The two highest being fiber at 3g/ serving and magnesium coming in at 10% the RDI/ serving. The red dragon fruit in particular is also packed with many natural antioxidants like betalains (also found in Beets).  Betalains assist with promoting cardiovascular health and reducing oxidation in the body. Eating too many of these (as the same with beets) can actually cause your urine to change color!  So don’t be alarmed after this drink, don’t worry it wasn’t that strong!

  1. So where does the jalapeño como into play in this recipe? Do you blend it in as well? Where, when and how do you add it?
