Curried Turkey Sloppy Joes in Sweet Potato Bowls

Curried Turkey Sloppy Joes in Sweet Potato Bowls
Ingredients

- 1 tablespoon avocado oil
- 1 pound ground turkey
- 1 yellow onion, chopped
- 2 bell peppers (1 red, 1 green), chopped
- 2 pitted medjool dates (soaked in hot water for 20 minutes)
- 1 14.5 ounce can tomato sauce
- 2 tablespoons curry powder
- ¼ cup canned coconut milk
- 1 teaspoon garlic powder
- ½ teaspoon ginger
- ½ teaspoon turmeric
- ½ teaspoon salt
- 1 teaspoon apple cider vinegar
Sweet Potato Bowls:
- 3 large sweet potatoes
Instructions
- Place a large skillet over medium high heat. Add in avocado oil, then onions and bell peppers. Cook until they become more translucent and soft, about 10 minutes. Then add ground turkey to the pan. Break up the turkey a lot with a wooden spoon so the pieces are small and let brown. Meanwhile, combine dates, tomato sauce, curry powder, coconut milk, garlic powder, ginger, turmeric and salt to a blender and blend until dates have broken down and the mixture is creamy. Once the turkey is cooked, add the tomato curry mixture to the pan and bring to a simmer. Let simmer for a few minutes then add apple cider vinegar and salt to taste.
To make sweet potato bowls:
- Start this before the sloppy joes! Preheat the oven to 400 degrees. Chop the ends off of the sweet potatoes so the base is at least 1 inch around. Then slice it in half widthwise. Place the sweet potatoes on a foil lined baking sheet with the large end down and small end up. Bake for 30 minutes then flip and bake for an additional 25 minutes. Let cool for 10 minutes then scoop a little of the center of the sweet potato out to create a bowl. Add curried turkey sloppy joe mix to the bowl, garnish with a little parsley and enjoy!
I made this tonight and it was BEYOND good. Sounded amazing when I read the recipe but the final product totally exceeded my expectations! The sauce is killer, I wanted to drink it. And on top of roasted sweet potatoes?! OMG. I’m on day 18 of Whole 30 and am so glad I found your blog right off the bat, it’s one of the only things that’s gotten me through. Thanks so much!

Just had this for lunch, and it was really good! I used a bit less curry powder, and cut the sweet potatoes lengthwise. They were easier to fill that way. Thanks for the recipe!

I found your blog when I did my first whole30 & tried several of your recipes, including after I finished. They’ve all turned out fantastic, so I was optimistic about this recipe because I love curry. I’ve tried several other curry recipes & they’ve all needed another ingredient or two added to it. However, when I tried this tonight it turned out fantastic! The sauce is divine, especially w/the sweet potato. It’s definitely going to be my new go to curry recipe & I can’t wait to try it w/other proteins.

Can’t wait to try this recipe! Question though – any Whole 30 subs for the dates? Or would it be bad to just leave them out? I have everything else at home to make this dish, don’t want to run to the store for only one ingredient! Thanks for any feedback.

I had this pinned for a while before finally trying it, and I’m kicking myself for waiting so long to try it! I followed the recipe exactly, except I just baked the sweet potatoes instead of doing sweet potato bowls. This recipe is the epitome of comfort food and will be on regular rotation in my house now.

This was a great twist on the traditional Sloppy Joe with the addition of curry. This was the second time making it and I doubled it to have some for freezer meals down the road. #LBOEATS way to go with another great whole30.
