Avocado Cilantro Dip
Ingredients
- 3 avocados, chopped finely
- 2 cups chopped cucumber
- 1 cup pico de gallo
- ½ cup cilantro
- ½ cup greek yogurt
- ¼ cup lime juice
- 2 tbsp honey
- 1 tsp minced garlic
- Salt and pepper to taste
- Extra cilantro to garnish
Instructions
- Set aside ½ cup of the chopped avocado.
- In a medium bowl combine the remaining avocados with chopped cucumber & pico de gallo.
- In a blender combine the ½ cup reserved avocado, cilantro, greek yogurt, lime juice, honey and garlic and blend until smooth.
- Pour mixture over the avocado mixture and toss to combine.
- Season to taste with salt and pepper.
- Pour into serving bowl and garnish with extra cilantro.
- Serve with sweet potato chips or tortilla chips.
