Make Strawberry Cheesecake Ice Cream Bars with cottage cheese, fresh strawberries, and graham crackers for a high-protein treat.

What Makes This Recipe Great
If you are trying to hit your daily protein goals while satisfying a serious sweet tooth, the viral cottage cheese ice cream trend is about to become your new best friend.
These Strawberry Cheesecake Protein Ice Cream Bars pack all the rich, velvety texture of traditional cheesecake but swap out the heavy cream for high-protein cottage cheese. They require absolutely no fancy ice cream maker, take under 15 minutes of hands-on time, and taste exactly like summer on a stick.
Ingredient Information

- Cottage Cheese– Go for 2% or full-fat (4%) for the creamiest, most authentic cheesecake texture.
- Chopped Strawberries– Finely chopped to add pockets of fresh flavor throughout the bars.
- Honey– A natural sweetener that keeps the ice cream soft enough to bite into after freezing.
- Strawberry Jam– Swirled in at the end to give you those gorgeous, vibrant cheesecake ribbons.
- Graham Crackers– Acting as the top and bottom “crust” for the ultimate ice cream sandwich vibe.

Pro Tip
Storage: Store your sliced bars in an airtight container in the freezer with sheets of parchment paper between the layers so they don’t stick together. They will keep beautifully for up to 3 weeks!
Frequently Asked Questions
Does it actually taste like cottage cheese?
Not at all. Once blended with the honey and frozen, the tangy profile of the cottage cheese mimics the exact flavor of cream cheese or Greek yogurt. If you don’t tell your friends or family what’s in it, they will never guess.
