Strawberry Cheesecake Ice Cream Bars

Make Strawberry Cheesecake Ice Cream Bars with cottage cheese, fresh strawberries, and graham crackers for a high-protein treat.

Ingredients 

  • 3 cups cottage cheese
  • ¼ cup honey
  • 1 cup chopped strawberries
  • ¼ cup strawberry or raspberry jam
  • 38 square graham crackers

Instructions 

  • In a blender combine cottage cheese, honey, strawberries and jam until smooth.
  • Line a 9 x 13 inch pan with parchment paper and add in (about 19) graham crackers to fill the pan.
  • Pour in the cottage cheese mixture and spread evenly.
  • Add more graham crackers on top.
  • Freeze for 4 hours or until hard. Remove and slice into squares. Keep in the freezer and just let sit out for about 5-10 minutes before enjoying!
