1poundcarrots, about 4-5 medium carrots, peeled and cut into similar-sized pieces as the potatoes
8ouncesbroccolini, about 1 bunch, trimmed
3tablespoonsavocado oil, or olive oil

For the Whipped Lemon Goat Cheese:
16ouncessoft goat cheese, softened (take it out of the fridge about 30 minutes before using)
1cupricotta cheese
2tablespoonslemon juice, freshly squeezed is best!
1teaspoonlemon zest, the yellow part of the lemon peel, grated
Salt to taste
For the Finishing Touches:
Balsamic glaze, you can buy this pre-made
1tablespoonfresh dill, chopped

Instructions
Get Ready to Roast:
Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
Line two large baking sheets with parchment paper (this helps with easy cleanup!).
Put the sliced potatoes and carrots on one of the baking sheets.
Put the trimmed broccolini on the other baking sheet.
Season the Vegetables:
Drizzle 2 tablespoons of avocado oil (or olive oil) over the potatoes and carrots. Sprinkle with 1 teaspoon of salt and ¼ teaspoon of black pepper. Toss everything with your hands or a spoon to coat them evenly with the oil and seasonings.
Drizzle the remaining 1 tablespoon of avocado oil (or olive oil) over the broccolini. Sprinkle with the remaining 1 teaspoon of salt and ¼ teaspoon of black pepper. Toss to coat.
Roast the Vegetables:
Put the baking sheet with the potatoes and carrots in the preheated oven and roast for 45 minutes.
After the potatoes and carrots have been roasting for 20 minutes, add the baking sheet with the broccolini to the oven. Roast the broccolini for 25 minutes (so it cooks for a total of 25 minutes).
The vegetables are done when they are tender and slightly browned.
Make the Whipped Lemon Goat Cheese:
While the vegetables are roasting, get your blender ready.
Put the softened goat cheese, ricotta cheese, lemon juice, and lemon zest into the blender.
Blend everything together until it's super smooth and creamy.
Taste the whipped goat cheese and add a pinch of salt if you think it needs it.
Assemble the Dish:
Choose a nice platter or serving dish.
Spread the whipped lemon goat cheese mixture evenly over the bottom of the platter.
Arrange the roasted potatoes, carrots, and broccolini attractively over the goat cheese.
Add the Final Flavors:
Drizzle balsamic glaze lightly over the roasted vegetables.
Sprinkle the chopped fresh dill over the top.

Notes
Make sure the carrot pieces are roughly the same size as the potato pieces so they cook evenly.
Don't overcrowd the baking sheets, or the vegetables will steam instead of roast. If you have too many vegetables, use a third baking sheet.
You can adjust the amount of lemon juice and zest to your liking.
If you don't have fresh dill, you can use a pinch of dried dill, but fresh is much better.
This dish is great served warm or at room temperature.
