Finely chop the kale and place it in a large bowl.
In a jar or small bowl, mix olive oil, balsamic vinegar, Dijon mustard, garlic powder, maple syrup, pepper, and salt. Shake or whisk until well combined.
Pour half of the dressing over the kale and massage it with clean hands until softened.
Add the chicken, apple, grapes, and celery. Toss to combine.
If needed, add more dressing to taste.
Top with glazed walnuts and gorgonzola cheese. Enjoy!
