Chopped Kale Waldorf Salad

Crisp chopped kale Waldorf salad with apples, walnuts, and a tangy dressing. A healthy twist on the classic recipe!

Ingredients 

  • 1 head kale, destemmed & finely chopped
  • cup olive oil
  • ¼ cup balsamic vinegar
  • 1 tbsp Dijon mustard
  • ½ tsp garlic powder
  • 1 tsp maple syrup
  • ¼ tsp black pepper
  • ¼ tsp salt
  • 3 cups chopped chicken
  • 1 cup diced apple
  • 1 cup chopped red grapes
  • 1 cup diced celery
  • ½ cup glazed walnuts
  • ¼ cup crumbled gorgonzola cheese

Instructions 

  • Finely chop the kale and place it in a large bowl.
  • In a jar or small bowl, mix olive oil, balsamic vinegar, Dijon mustard, garlic powder, maple syrup, pepper, and salt. Shake or whisk until well combined.
  • Pour half of the dressing over the kale and massage it with clean hands until softened.
  • Add the chicken, apple, grapes, and celery. Toss to combine.
  • If needed, add more dressing to taste.
  • Top with glazed walnuts and gorgonzola cheese. Enjoy!
