Ingredients

  • Banana– Make sure your bananas are trending on the spotted side.
  • Butter – Using unsalted butter allows you to control the salt in the recipe.
  • Maple Syrup– Natural maple syrup is the best kind.
  • Eggs– I always like to make sure my eggs are room temp whenI use them in a baking recipe.
  • Milk– Whole, skim or any non dairy alternative will work.
  • Spinach– Kale and Spinach mix can also be used.
  • Vanilla
  • Whole Wheat Flour– I have also used regular white flour in this recipe.
  • Baking Soda
  • Salt
  • Cacao Powder– Cocoa powder works as well.
  • Mini Chocolate Chips- mini work great but any kind of chopped chocolate will work.

Step by Step

  1. In a large bowl mix all your dry ingredients flour, salt, baking soda and cacao powder mix well.2.
  2. Next add your eggs, mashed bananas, maple syrup and vanilla to the fry ingredients and thoroughly mix. Then add the melted butter and mix again.
  3. In a blender or ninja bullet add the milk and spinach and blend completely. Add the bright green blended spinach to the bowl.
  4. Lastly, fold the mini chocolate chips into the bowl.

Pro Tips

  • Make sure and blend your spinach and milk together before you mix it with the other ingredients. 
  • A plate and fork is the easiest and fastest way to mash your bananas.

What if I don’t have fresh spinach?

  • Feel free to use frozen spinach if you have it. If not, feel free to substitute with other veggies; kale and arugula would both work great. If you don’t have either of those you can try cooked sweet potato or spaghetti squash, just make sure you blend them well.

Can I make this into a loaf?

  • Yes of course!! Most any muffin recipe can be turned into a loaf and most loaf recipes can be turned into muffins. Just make sure you add or subtract time to the baking time. With a loaf I would start at 350 degrees for 40 min and check until cooked thoroughly.

Ingredients

Scale
  • 1 cup packed mashed banana
  • ½ cup melted butter
  • ½ cup maple syrup
  • 2 eggs
  • ¼ cup milk
  • 1 cup Large handful spinach
  • 1 tsp vanilla extract
  • 1 ½ cup whole wheat flour
  • 1 tsp baking soda
  • ½ tsp salt
  • ⅓ cup cacao powder
  • ½ cup mini chocolate chips

Instructions

  • In a large bowl combine the dry ingredients whole wheat flour, baking soda, salt and cacao powder mix and set aside, 
  • In another bowl mix melted butter, maple syrup, eggs and mashed bananas, mix well. You want to make sure the spinach is almost liquid when you mix it with the wet ingredients. To make this happen, grab any high power blender and add the milk and spinach and blend. Next add the blended spinach to the wet ingredients. Next add the dry ingredients to the bowl of wet ingredients. At this time you can even add mini chocolate chips. Scoop into muffin tins and bake for 15-18 minutes at 350 degrees. 
  • Should make around 15 muffins.

  1. These are wonderful, the chocolate and banana flavor is wonderful, so delicious. My kids are hooked, I made them mini muffins, and doubled the batch to freeze some for later. 






  2. These were delicious and loved by kiddos and adults alike. Super easy to make and used the silicone mini muffin pan and loved how easy they popped out! My 3 yr old wanted to bake them with sprinkles on top and they were a delightful touch.
