Sweet Vanilla Almond Butter

If you follow me on instagram then you might know that I am obsessed with RX bar’s vanilla almond butter! So of course I attempted to make it myself and out came this Sweet Vanilla Almond Butter! I love nut butter so very much and love that Ruthie loves it too. This version is slightly sweet from dates and nice and smooth – but remember to blend blend blend it for a long time to get it nice and creamy. Putting some of this on sweet potato toast is of course the best thing ever! You can also put it on bread, on your oatmeal, in a smoothie… the options are endless really. I love my food processor so so much, for many reasons, but nut butter is probably my numba one. That and energy balls of course!
By the way, is anyone else thinking how on earth is it already March?? I really can’t believe it and just like that is already half way through March too! Time passes way to quickly lately and with Ruthie crawling all over the house, the days go by at lightning speed. I made some cinnamon bread (which I will share the recipe on soon) and put this sweet vanilla almond butter on it and ruthie and I were in love with it!! She is such a good little eater now and it makes me so happy!! 🙂

Sweet Vanilla Almond Butter
Ingredients
- 2 cups roasted unsalted almonds
- 3 tablespoons refined coconut oil, melted
- 3 pitted medjool Dates
- 2 teaspoons vanilla extract
Instructions
- Combine all ingredients in a food processor and blend until smooth, about 10-15 minutes.
How long does this last in the fridge?
Probably a couple of months… Mine never lasts that long! 🙂
