Maple Almond Butter Bacon Cookies

There is one staple item in a balanced diet that I just don’t talk about enough….. BACON!!! It is important when buying bacon to look at the ingredient list. I know you think, it’s just bacon though! Nope. A lot of bacon at the store has tons of sugar and chemicals added to make it last longer and taste better, but trust me it doesn’t need it! If you can just have your meat counter cut you pieces that would be the best, but I like to get the pack from Trader Joe’s that is called “Classic Sliced Dry Rubbed, All Natural Uncured Bacon”. This one even has some raw sugar along with spices in the rub but compared to farmer john’s that contains these >> “water, salt, sugar, sodium phosphates, sodium erythorbate, sodium nitrite, flavorings, dextrose”, a little raw sugar is just fine. It is crazy what they can pack into a simple and beautiful meat though! When I first was thinking about an almond butter cookie, I thought about those flour-less peanut butter cookies of my childhood that contained nothing but peanut butter, sugar and an egg. To go refined sugar free I opted for Maple Syrup instead of sugar and just let the whole mixture cool in the fridge for a bit before baking! The bacon in these cookies works so well with the almonds for a salty and sweet bite that you don’t have to feel guilty about! Now bacon is definitely not foreign to this blog… remember when I made Peanut Butter, Jelly & Bacon Sliders? Or when I added bacon to my Everyday Green Beans back in the first few months of this blog when my photos were terrible?? Haha oh how that post makes me laugh… I was still living with my rents! It seems that no matter how much time passes, bacon will always be high on my list of food loves. The other great thing about this recipe though? 5 ingredients.
Mix the dough together, chill for a bit, scoop onto a baking sheet and top with more bacon… obviously.
Oh and a little salt?? Sea salt does amazing things when added to the top of cookies. TRUST!
These cookies are soft and chewy with just the perfect sweet and salty balance. Enjoy!

Maple Almond Butter Bacon Cookies
Ingredients
- 1 egg
- 1 cup almond butter
- ⅓ cup maple syrup
- ½ teaspoon baking soda
- ½ cup crispy chopped bacon + 1 tablespoon set aside
- 12 almond slivers for topping
- sea salt
Instructions
- Preheat oven to 350 degrees. In a medium bowl, whisk egg until slightly frothy. Add almond butter, maple syrup, baking soda and 1/2 cup of chopped bacon. Place bowl in the refrigerator for about 30 minutes to firm up. Scoop into 12 balls of dough on a cookie sheet lined with parchment paper. Flatten each ball a bit and top with remaining bacon bits and 1 sliver of almond. Bake for 10 minutes then move them to a cooling rack to cool. Top each with a bit of sea salt!
