Mix the Dry Ingredients:
In a large bowl, combine the Rice Chex, crushed lemon cookies, bunny grahams, pretzels, chopped crystallized ginger, and cashews. Mix it all up.
Make the Sweet Syrup:
Put the butter in a microwave-safe bowl.
Microwave on high for about 1.5 minutes, until the butter is melted.
Add the brown sugar to the melted butter and stir.
Microwave again for about 1.5 minutes, until it's bubbly.
Whisk the butter and brown sugar mixture until it thickens a little, like syrup.
Bake the Chex Mix:
Spread the coated cereal mixture evenly onto the prepared baking sheets.
Sprinkle the ginger sugar mixture over the cereal.
Gently stir the cereal on the baking sheets to make sure all the pieces are coated with the ginger sugar.
Bake for 45 minutes, stirring the mix halfway through the baking time.
Cool and Add Almonds:
Let the Chex Mix cool completely on the baking sheets.
Once it's cool, add the lemon creme almonds and mix them in.
- If you can't find lemon cookies, you can use vanilla wafers or shortbread cookies and add lemon zest to the sugar mixture.
- Be careful when working with the hot syrup.
- Make sure the Chex Mix is completely cooled before storing it, or it might get soggy.
