Lemon Ginger Chex Mix

This sweet and spicy snack mix is perfect for parties or just snacking!

Ingredients 

  • 6 cups Rice Chex cereal
  • 2 cups lemon cookies, crushed
  • 2 cups bunny grahams
  • 2 cups pretzels
  • ½ cup chopped crystallized ginger
  • 1 cup raw cashews
  • 1 cup 2 sticks butter
  • 1 cup brown sugar
  • ¼ cup white sugar
  • 1 tablespoon ground ginger
  • 1 cup lemon creme almonds

Instructions 

Prep Your Oven and Pans:

  • Preheat your oven to 275°F (135°C).
  • Line two baking sheets with parchment paper.

Mix the Dry Ingredients:

  • In a large bowl, combine the Rice Chex, crushed lemon cookies, bunny grahams, pretzels, chopped crystallized ginger, and cashews. Mix it all up.

Make the Ginger Sugar:

  • In a small bowl, mix the white sugar and ground ginger together. Set it aside.

Make the Sweet Syrup:

  • Put the butter in a microwave-safe bowl.
  • Microwave on high for about 1.5 minutes, until the butter is melted.
  • Add the brown sugar to the melted butter and stir.
  • Microwave again for about 1.5 minutes, until it's bubbly.
  • Whisk the butter and brown sugar mixture until it thickens a little, like syrup.

Coat the Cereal Mix:

  • Pour the sweet syrup over the cereal mixture in the large bowl.
  • Use a spatula to stir everything together until all the cereal pieces are coated with the syrup.

Bake the Chex Mix:

  • Spread the coated cereal mixture evenly onto the prepared baking sheets.
  • Sprinkle the ginger sugar mixture over the cereal.
  • Gently stir the cereal on the baking sheets to make sure all the pieces are coated with the ginger sugar.
  • Bake for 45 minutes, stirring the mix halfway through the baking time.

Cool and Add Almonds:

  • Let the Chex Mix cool completely on the baking sheets.
  • Once it's cool, add the lemon creme almonds and mix them in.

Store It:

  • Store the Lemon Ginger Chex Mix in an airtight container.

Notes

  • If you can't find lemon cookies, you can use vanilla wafers or shortbread cookies and add lemon zest to the sugar mixture.
  • Be careful when working with the hot syrup.
  • Make sure the Chex Mix is completely cooled before storing it, or it might get soggy.
