Okay if your hand is raised (literally or metaphorically) – keep reading! I love tacos. And I love you if you were on the literally end of the hand raising.  Tacos  come in many shapes and sizes and I love them all. In tortillas, in bowls, in lettuce wraps… any which way will do.  So last weekend when we set out to make our 1,356th frittata of the year, we thought we could mix it up and throw in our favorite taco seasonings!  We had a huge tub of taco seasoning from Costco but when we started Whole 30 and saw that it was packed with sugar and oil somehow, we decided to opt for a DIY taco blend from now on.  I just mix up chili powder, cumin, garlic powder and paprika to give anything from fish, to beef to chicken to sweet potatoes that “taco” flavor.  So bacon seemed like an appropriate next step for tacoville!  And here is a quick knowledge bomb for ya – the word Frittata in Italian roughly translates to “fried”.  While we don’t really fry this dish, it is along the same lines as a fried egg as we pour the eggs into the pan and let sit there and get nice and golden!  I love making frittatas because they are super simple to throw together and love SUPER impressive.  I mean look at that beauty? This recipe is Whole 30 compliant as long as you purchase clean bacon and follow a DIY seasoning blend!

Sliding it out of the pan onto a cutting board is definitely my favorite part about the frittata.

Bacon Taco Frittata

Servings: 0

Ingredients 

  • 3 strips of bacon, cooked & chopped
  • 1 teaspoon ghee
  • ¼ cup chopped onions
  • ½ cup chopped cherry tomatoes
  • 5 eggs
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon chili powder
  • teaspoon cumin
  • dash of paprika
  • 1 tablespoon chopped cilantro
  • guacamole & salsa

Instructions 

  • Place a small skillet (about 8 inches) over medium high heat. When the pan gets hot, add ghee and onions. Let onions cook for about 2 minutes or until soft. Add cherry tomatoes to the pan and let cook for another minute or until slightly soft. In a small bowl combine eggs, salt, pepper, garlic powder, chili powder, cumin and paprika. Whisk for about a minute until well combined.
  • Turn broiler on high to get warm. Pour eggs into pan and stir just to evenly distribute ingredients in the pan. Sprinkle the top with chopped bacon. Let sit for about 2-3 minutes or until the bottom is set. You will be able to tell when you shake the handle and only the top giggles a little. Then place the pan in your oven under the broiler and let the top cook for about 1-2 minutes or until it is set. Keep an eye on it, this will happen fast! Then slide the frittata out onto a cutting board and slice into pieces like pizza. Top with cilantro, guacamole and salsa!

    Awesome stuff here! I doubled the recipe and used a big cast iron. I also added some spinach when I put in the tomatoes. It turned it so good with a little guac on top. Thanks again for another great one Kelsey!
