Sweet Basil Dressing

I was just going to start this post with “OH SWEET BASIL!”, then I realized that is the name of a blog! And I actually met Carrian, who runs the blog Oh Sweet Basil this past weekend at the Everything Food Conference! She and her hubby run their blog and she dropped so much knowledge about blogging as a business. I am feeling more inspired than ever to create amazing content for you guys and bring you all the recipes you are looking for! This one is exactly that because on instagram, a lot of you want to see more salads! I am loving salads lately which you can see on #kelseysbigsaladbowl. I think salads can be so much more exciting than people think sometimes and adding a sweet basil dressing to just about any food makes it 10 times better. I am a huge fan of pesto but when I did my first Whole30 I was like, waaait there is cheese in pesto!? One of those things you don’t realize until you make it yourself. So I wanted that same pesto flavor in a smooth and creamy dressing that goes perfectly on not only salad but I love it on grilled chicken too! I feel like I talk about my salad topping obsession all the time but I am all about ALL of the toppings. I feel like I definitely always need a fruit and a nut on top and always have them on hand. When I made a salad for this dressing I had blueberries and pistachios and those worked perfectly.

Sweet Basil Dressing
Ingredients
- 1 cup fresh basil leaves, loose
- ½ cup olive oil
- ½ cup apple cider vinegar
- 1 teaspoon garlic powder
- 2 pitted medjool dates, soaked in hot water to soften
- ½ tsp coarse salt
- ½ tsp ground pepper
Instructions
- Combine all ingredients in a blender and blend on high until dates are broken down and it is smooth and creamy! Drizzle over a salad or chicken!
Would omittimg the dates work? I realize that it would f be “sweet” basil dressing anymore, but trying to stay away from any added sugars…

OMG….the most delicious dressing I have ever tasted, especially if you like basil. I made a spinach/kale with blackberries & slivered almonds salad, delicious!!! Now I can finally get my greens in. Thanks Kelsey for sharing such a delicious dressing.

I made this dressing during my first (successful–I had been trying to complete one since 2010, eek!) whole30 almost 2 years ago. I’m happy to report that it has been a year round staple in my fridge ever since!! I absolutely love it.
