It is Wednesday!  That means I have to eat a healthy breakfast option.   If it were Sunday, I would be sharing some sort of delicious sticky bun waffles or something.  Week days are for eating healthy and I have to share with you my new weekday favorite.  I go back and forth on what the best breakfast is for me, and I still haven’t decided!  I like to eat something that is light, but can still keep me full until at least 10:30.  Throwing cereal in a bag was my thing for a while, but I would be always be starving by 9.  Then I would make egg whites and vegetables, which was so great, but I can never get up early enough to make that happen.  So this week my breakfast has been this delightful Spinach Smoothie.  I call it Sunny because it makes you feel vibrant and well, sunny!  I drink it once I get to work at 7:30, and it keeps me full until about 11:30.

Some people get nervous about spinach, but let me tell you, this smoothie tastes like a Peanut Butter and Banana Shake! With just a few ingredients, this meal can be your breakfast, lunch, or afternoon snack (heck, add a few chocolate chips and it is dessert!).

The line up: Frozen Banana (chopped), Greek Yogurt, Milk, Spinach, Peanut Butter.

In they go into the blender!  First the banana, then peanut butter, then yogurt, and milk…

Top with Spinach……..

Blend until smooth and sipable!  I like to throw smoothies into a mason jar or this jar, which once held slice peaches from costco.  Then I throw it in my car and drink it at work!

I might look a little crazy, but spinach is pumping through my veins!!  Give it a try, I think you will be suprised!!
