Strawberry & Grapefruit Parfait

Sometimes great ideas hit you like a ton of bricks. This last weekend I was at the farmers market thinking of what to make. I knew I had a bunch of ripe strawberries at home so I wanted to pair them with another fruit to showcase their sweet flavor. I saw some beautiful grapefruits and my mind almost exploded. I have never been a huge grapefruit fan because they are a bit to bitter for me. Just like people pour sugar on grapefruit, mixing them with strawberries brought out their sweeter side and the two together was a match made in fruit heaven. I don’t often see the two together but it will be a new staple for me. I made this parfait with greek yogurt and some graham cracker crumbs so it could be either a sweet breakfast or a healthy dessert!!
First grab your beautiful fruits.
Toss in a bowl and sprinkle with a pinch of sugar. Mix together to get the juices flowing.
Crush some graham cracker and sprinkle in the bottom of your glass.
Top with some yogurt, then the fruit and more graham.
Top that with more yogurt, graham and fruit!

Strawberry & Grapefruit Parfait
Ingredients
- ½ a grapefruit, peeled and chopped
- ½ cup chopped strawberries
- 6 oz. greek yogurt
- 2 squares of graham crackers, crushed
- pinch of sugar
Instructions
- In a small bowl mix together grapefruit and strawberries. Sprinkle with a pinch of sugar and toss to coat. In a glass, layer the 1/2 of the crushed graham crackers, yogurt and fruit, then repeat. Enjoy!
