So I think it is about time I tell you about my view on food.  I love it.  I love pizza, I love candy, and I love beer.  But in my everlasting journey to be supermodel skinny, I have found that I can’t eat those things as breakfast, lunch, and dinner.  Being an athlete most of my life I haven’t really had to eat incredibly healthy, and could maintain a normal (ish) size.  But it has been a year since I have played a sport and have tried a few methods to keep in shape.  My mom and I did P90X in the fall of 2011, and it was great!  We both lost about 10 pounds and felt great, but then the holidays came around and we thought it was time to reward ourselves with 5 pounds of sugar cookies, lemon curd, and Chardonnay.

BUT, the new year brought on more healthy eating and dance cardio DVDs, which has helped maintaining weight, but hasn’t shed any extra poundage.  So a week and a half ago, on May 20th, my sister thought it would be a good idea to embark on a biggest loser challenge against my mom, my boyfriend, and myself.  IT IS ON!  We will be doing it for 6 weeks, and final weigh in is July2nd, just in time for the hot dog holiday!  So between the devilish treats I display here, I will share my healthy dinners and journey to become that girl you scowl at on the beach.

Cut to – beef tips.  This recipe was actually found by my mom on a website full of healthy weight watchers recipes.

She pinned it.  It got 96 repins. I have pin envy. Pinvy? Totally.

Before I left for work this moring I threw together the 4 ingredients below into a crock pot, and set it on low.

When I got home from work the house was filled with the smell of a delicious home cooked meal.  I opened up the crock pot to this:

mmmmmmmm!  All I did then was cook up some broccoli and spoon the meat and sauce over it.  Easy and a definite taste of comfort food for only 6 weight watchers points a serving!  This diet might not be so bad after all!

Mushroom Beef and Broccoli

Servings: 0

Ingredients 

  • 2 pounds lean chuck – cut in 1 – 3/4 inch pieces
  • 1 can 98% fat free cream of mushroom soup
  • 1 pkg. onion soup mix
  • 1 can Diet Ginger Ale
  • 1 Head of Broccoli

Instructions 

  • Put meat in crock pot. Pour soup & onion soup mix over meat. Add Diet Ginger Ale. Cook in crock pot all day on low (or high for at least 4 hours). Turn off and let sit for 30 minutes before serving.
  • Cook broccoli in boiling water for 3 minutes. Drain and rinse. Pour beef mixture over broccoli, or mix together.
  • Makes 8 servings.
  • Each serving = 6 Weight Watchers Points
