Mocha Ice Cream Pie

Coffee. Ice Cream. Chocolate. There are few things better than those 3 right there. Summer is the season of iced coffee and easy desserts. No one wants to be baking all day in your condo that is 90 degrees (even though its 80 outside). Is that just me? Well wherever you are in the world, I am sure we can all appreciate an easy and delicious dessert. When you make this, because I am sure you will, I suggest being prepared. Be prepared for it to be gone quickly and possibly have ingredients for two batches if possible. I am also sure that this would be incredible with many types of ice cream. Mint Chip, Strawberry, Rocky Road! GAH. I get too excited over ice cream. Anywho. Here I am talking about summer and heat when it is already almost over! Pumpkin Spice stuff is already out?! It’s too much. I love seasons but I love them because they are short and make you miss them! Anyways, end rant.
Oh and side note… what do you think of my new layout?? I felt like a change was necessary. And I was home alone this weekend and got CRAZY on WordPress. I would love to know what you think of the simplicity of it and all that jazz. Now onto the star of this post… MOCHA ICE CREAM PIE!!
I dumped a whole tub of ice cream in the oreo cookie crust. Then smoothed it out with a spatula.
Then drizzled on some hot fudge and sprinkled mini chocolate chips!

Mocha Ice Cream Pie
Ingredients
- 20 oreos
- ¼ cup butter, melted
- 1.75 qt tub of coffee ice cream
- hot fudge
- mini chocolate chips
Instructions
- Either in a food processor or a Ziploc bag, smash oreos as much as you can until they are small crumbs. This is easiest in a food processor but I don't have one so a bag and a meat mallet or rolling pin works great! Pour crumbs into a bowl and mix with melted butter. Pour this mixture into a pie pan and press so that it makes an even crust. Chill in the freezer for about 10-15 minutes. Let you ice cream thaw on the counter for a few minutes. Scoop out ice cream into crust. How much you scoop will depend on your pan size. I used a deep dish pie pan so I used all of the ice cream, but if yours is smaller just fill to the top. Smooth ice cream with a spatula or knife. Drizzle hot fudge on top. To make my drizzle pretty, I made a makeshift piping bag out of a small Ziploc bag by cutting the corner off. Then top with some mini chocolate chips! Place back in the freezer for at least 15 minutes to harden. Slice and enjoy!!
