Mexican Cobb Salad

This recipe takes the classic Cobb salad and gives it a delicious Mexican twist! It's super easy to assemble, especially if you use pre-cooked ingredients.

Ingredients 

Salad:

  • 2 heads of romaine lettuce, chopped
  • 3 chicken breasts, grilled
  • ½ cup Cotija cheese
  • 1 cup Roasted corn
  • 1 cup Pico de gallo
  • ½ cup Guacamole

Chipotle Ranch dressing

  • ¾ cup Greek yogurt
  • ¼ cup Mayonnaise
  • 1 packet Ranch seasoning
  • 2 chipotle peppers, from the can
  • Juice of 1 lime
  • Salt to taste

Instructions 

  • In a large bowl add chopped romaine lettuce.
  • Combine all dressing ingredients in a blender and blend until smooth.
  • Pour dressing over lettuce and toss to combine.
  • Top salad with grilled chicken, Cotija cheese, roasted corn, pico de gallo, and guacamole.
  • Serve and enjoy!
