Asparagus Bruschetta Crostinis with Mustard Lemon Goat Cheese

There are many things in life that I question. Some are easy to answer and some keep me up at night. Should I bring a jacket? Always. Should I finish my dinner even though I’m full? Probably not. Will I do it anyways? Almost always. Most of the questions I ask myself are like this. Things that I know what I should say, and I know what I want to say. The two are rarely the same. Should I go to the gym? YES! Do I want to… not particularly. A good portion of the time, the question involves how many glasses of wine I should drink and I have been pretty good on that one. But if I said yes to the gym question I can have an extra right?
The questions that really make me think are ones that I don’t often like to think about. Most of these involve the future and the question, how can I make more money?! I think everyone can relate to this one. I love having dreams but mine are getting loftier by the day. After spending a few days in Nashville for work, I realized how much it costs to travel. Luckily it was for work and I could expense things, but when will I be able to afford a real vacation? Being 25 now I realize I still have some time to make big bucks and not stress about going out to dinner, but being a millennial… I want it now! When I start to ask myself these questions about the future, I find myself reminding myself how lucky I am right now. When I start to stress even for a minute, I remember that goat cheese was put on this earth for a reason.
That reason? Well isn’t it obvious? To mix with lemon zest & whole grain mustard, spread on a crostini and top with asparagus!
Roast some asparagus. Then place your goat cheese in a bowl with mustard and lemon zest.
Mix until combined!
Toast up those crostini!
Spread on that delicious goat cheese.
Top with asparagus and enjoy!!

Asparagus Bruschetta Crostinis with Mustard Lemon Goat Cheese
Ingredients
- 3 cups chopped asparagus
- 1 tablespoon olive oil
- salt and pepper
- 5 oz. goat cheese
- 1 tablespoon lemon zest
- 2 tablespoon whole grain mustard
- 1 french baguette
Instructions
- Preheat oven to 400 degrees. Place chopped asparagus on a cookie sheet and toss with olive oil and salt and pepper. Roast in the oven for 20 minutes, then set aside.
- In a small bowl, combine goat cheese, lemon zest & whole grain mustard until combined.
- Slice a baguette into thin slices. Put the broiler on in your oven and toast the slices on each side until lightly browned. Once crostinis are prepared, spread on the goat cheese mix and top with asparagus. Serve on a nice platter and enjoy!!
