What pops in your head when you think about America?  It is along the lines of Baseball and Hot Dogs?  Budweiser and Country Music?  Yeah me too!  I love all of these things, and tomorrow is the day we get to take off work and enjoy them.  Another thing I think about around this time is food.  Food is just about America’s backbone.  We love it.  And lucky for you, I will be sharing 2 of my favorite recipes today, that combine to make a wonderful treat.  First I made my favorite sugar cookie dough and pressed it down into a greased cookie sheet.  I baked that for about 10 minutes.

^This is also a good example of the difference in picture quality in natural light and indoor lighting! Then I got started on the Lemon Curd.  This recipe is from my great-grandmother.  She was a pastry chef in England, and we still use this recipe that I believe my grandma’s sister wrote out.

It makes me happy.  We usually make this recipe around the holidays and it is always a hit.  Sweet and tart is the perfect combo. Only 4 ingredients too, and the 4 best ingredients at that!

You definitely do not need to use Baker’s Sugar but I had some and thought, why not!  Gotta make it Lemony!

Now you will melt, mix, and cook the curd until it is thick and amazing.  The last thing you make is the whip cream!  Home made whip cream is always the way to go in my opinion because it is so easy to make and way tastier than in a can.  All you need is 1 cup whipping cream, 1 tablespoon of powdered sugar, and 1 teaspoon vanilla.

Now for the assembly.

I highly suggest if you are going to make this, that you assemble right before you serve!  It looked great at this stage, but I attempted to take it to work and the strawberries made the curd rather runny.  It is so delish though.  This can also be made in individual serving with a little sugar cookie, then the curd, whip cream, topped with berries.
