Pecan Pie Granola

Question:  Why have I waited this long to make granola???  It is so easy to make and ridiculously delicious.  I originally wanted to make a vanilla almond granola because Matt loves the one from Trader Joe’s, but I didn’t have almonds, I had pecans!  So I thought it was appropriate to make some fall inspired crunch and went with pecan pie!  This is reminiscent of pecan pie for me because I add cinnamon (which I always put in my pie) as well as brown  sugar and some maple syrup for sweetness.  You can eat this over yogurt or by the handful… either way it will be hard to stop the consumption.  I brought this batch to work and it got gobbled up pretty quickly, which is the best!  I want to bake a lot this fall but am trying to be healthy (that whole wedding thing and all), so I plan on bringing lots of treats to work.  It’s also a good way to promote my blog so, win win!  My favorite thing about granola is that you can pretty much make it with anything in your pantry, as long as you have oats! Now go make some granola!

Pecan Pie Granola


Ingredients

Scale
  • 2 cups old-fashioned rolled oats
  • 1/2 cup pure maple syrup
  • 1/4 cup brown sugar
  • 1/2 cup pecan pieces
  • 2 Tablespoon vegetable oil or melted coconut oil
  • 3/4 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/8 teaspoon salt

Instructions

  1. Preheat oven to 300 degrees. Spray large baking sheet w/ nonstick spray. Combine all ingredients and stir until all the oats are evenly coated. Spread onto prepared baking sheet and bake for 1 hour, stirring every 15 minutes.Allow to cool completely to make sure they get crunchy, and enjoy!
