In a bowl combine softened goat cheese, cream cheese, salt, dill and lemon juice.
Use a hand mixer or whisk to whip and combine the ingredients.
In a pan over medium heat, add 1 tbsp oil. Once the oil is hot, add carrots and cook, stirring occasionally until carrots are caramelized. Top with honey and toss to coat.
Pour carrots over whipped goat cheese and top with chopped pistachios.
