Whipped Goat Cheese with Honey Glazed Carrots and Pistachios

Sweet, savory, and creamy. This whipped dill goat cheese with honey carrots is the perfect easy, healthy appetizer.

Ingredients 

  • 8 oz goat cheese, softened
  • 4 oz cream cheese, softened
  • ½ tsp salt
  • 1 tsp chopped dill
  • 2 tsp lemon juice
  • 1 tbsp avocado oil
  • 2 cups chopped carrots
  • Pinch of salt
  • 2 tbsp honey
  • ¼ cup chopped pistachios

Instructions 

  • In a bowl combine softened goat cheese, cream cheese, salt, dill and lemon juice.
  • Use a hand mixer or whisk to whip and combine the ingredients.
  • In a pan over medium heat, add 1 tbsp oil. Once the oil is hot, add carrots and cook, stirring occasionally until carrots are caramelized. Top with honey and toss to coat.
  • Pour carrots over whipped goat cheese and top with chopped pistachios.
