Spiced Olive Oil Cake

Ingredients 

  • 1 cup applesauce
  • 3 eggs
  • 3 tbsp olive oil
  • ½ cup coconut sugar
  • 1 tsp vanilla extract
  • 2 cups oat flour
  • 2 ½ tsp ground cinnamon*
  • 1 tsp ground nutmeg
  • 1 tsp ground ginger
  • ½ tsp allspice
  • ¼ tsp ground cloves
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. Salt

Icing:

  • 1 cup powdered sugar
  • 2 tsp vanilla extract
  • ½ tsp cinnamon
  • 2 to 3 tbsp milk

Instructions 

  • Preheat oven to 350 degrees.
  • Combine all ingredients in a bowl and stir to combine.  Pour into a parchment lined loaf pan and bake for 35 minutes.
  • Let it cool then combine icing ingredients until the consistency is thick but pourable.
  • Pour icing over cake and enjoy!
