Pumpkin Chocolate Chip Oat Muffins

Ingredients 

  • 1 cup quick oats
  • 1 cup almond flour
  • ½ tsp salt
  • ½ tsp baking soda
  • ½ tsp baking powder
  • 1 tsp cinnamon
  • 3 eggs
  • cup pumpkin
  • 1 tsp vanilla
  • ¼ cup coconut oil, melted
  • ½ cup coconut sugar
  • ½ cup chocolate chips

Instructions 

  • Preheat oven to 350 degrees.
  • Put the oats in a blender and blend until they are ground.
  • Combine all ingredients in a bowl and mix to combine.
  • Pour into a muffin pan (lined or spray with oil).
  • Bake for 25 minutes or until it doesn’t look soft at all on top.
