Chopped Ginger Cucumber Salad

Fresh & crunchy! This Chopped Ginger Cucumber Salad features edamame, bell peppers, and a zesty sweet Thai dressing.

Ingredients 

  • 8 persian cucumbers, sliced
  • 2 bell peppers, i like red and orange, sliced
  • 1 cup shelled edamame beans
  • ¼ cup soy sauce
  • ¼ cup sweet thai dressing
  • 2 tbsp rice vinegar
  • 2 tsp garlic powder
  • 1 tsp grated fresh ginger
  • 3 tbsp furikake

Instructions 

  • In a bowl combine sliced cucumbers, bell peppers and edamame beans.
  • In a liquid measuring cup combine soy sauce, thai dressing, garlic powder and fresh ginger.
  • Pour dressing over the veggies and stir to coat. Add in furikake.
  • Serve as a side to any protein or dumplings!
