Chopped Fajita Lettuce Cups

Ingredients 

  • 1 tablespoon oil, like olive or avocado
  • 4 chicken breasts
  • 2 bell peppers, any color!, chopped into small pieces
  • 1 yellow onion, chopped into small pieces
  • 1 packet of fajita seasoning mix
  • ½ cup salsa, any kind you like!
  • 1 head of iceberg lettuce
  • 1 lime wedge
  • Your favorite toppings!, like shredded cheese, sour cream, avocado, cilantro, etc.

Instructions 

  • Heat up the pan: Put a big pan on the stove over medium heat. Add the oil to the pan.
  • Cook the chicken: Place the chicken breasts in the hot pan. Cook them for about 4 minutes on each side, or until they are cooked all the way through and no longer pink inside.
  • Rest the chicken, keep the pan hot: Take the cooked chicken out of the pan and put it on a plate. Don't turn off the stove or clean the pan yet! Keep it on medium heat.
  • Cook the veggies: Add the chopped bell peppers and onions to the same pan. Cook them for about 10 minutes, or until they get soft.
  • Chop the chicken: While the peppers and onions are cooking, chop the cooked chicken into small pieces.
  • Combine everything: Put the chopped chicken back into the pan with the cooked peppers and onions. Add the salsa and the whole packet of fajita seasoning. Stir everything together and cook for another 3 minutes. This lets all the flavors mix together.
  • Make the lettuce cups: Take the iceberg lettuce and remove the hard core at the bottom. This will help you pull off the leaves to make cups.
  • Fill the cups: Spoon the chicken and veggie mixture into the lettuce cups.
  • Add your favorite stuff: Squeeze some lime juice over the top and add any toppings you like! Enjoy your easy and delicious fajita lettuce cups!
