To make simple syrup, combine coconut sugar, water and rosemary into a small saucepan and cook on medium until sugar is dissolved. Turn off heat and let rosemary infuse for about 20-30 minutes, then remove rosemary and discard.
To make the drink combine bourbon, lemon juice, 1 oz. simple syrup and raspberries. Muddle together with the bottom of a wooden spoon or a muddler.
Fill a cup with ice and strain the drink over the ice. Garnish with rosemary and a lemon peel!
