Pie Crust Strawberry Shortcakes

The easiest dessert! Flaky pie crust rounds topped with sweet, juicy strawberries and cream. Ready in just 15 minutes.

Servings: 2

Ingredients 

  • 1 roll of pie dough
  • Sugar to top
  • 2 cups chopped strawberries
  • 2 tbsp sugar
  • Whipped cream

Instructions 

  • Preheat oven to 425 degrees.
  • Roll out the pie dough then use a round cookie cutter or wide mouth jar to cut 6 circles out of the dough.
  • Line a baking sheet with parchment paper and place each pie round on the sheet. Sprinkle each with sugar to coat.
  • Bake the pie rounds for 12-15 minutes or until golden brown on the edges.
  • While the pie dough cooks, add chopped strawberries to a bowl and top with 2 tbsp sugar. Use a fork or potato masher to mash the strawberries slightly. This will bring out their juices and make a sauce for them.
  • Once the pie rounds are cooked. Top each with strawberries and whipped cream!
