Healthy Chopped Broccoli Salad

Crunchy & healthy broccoli salad with bacon, cranberries, and a creamy Greek yogurt dressing. Perfect for picnics or a quick side!

Ingredients 

For the Creamy Dressing:

  • 3 tablespoons apple cider vinegar
  • 2 tablespoons honey
  • ½ cup plain Greek yogurt, any fat percentage is fine
  • ¼ cup mayonnaise
  • ½ teaspoon black pepper
  • teaspoon salt

For the Salad:

  • 1 cup chopped bacon, cooked until crispy (about 6-8 slices)
  • 8 cups broccoli florets, diced into small pieces (about 2 medium heads of broccoli)
  • ½ cup dried cranberries
  • ¼ cup red onion, diced very finely
  • cup sunflower seeds, shelled

Instructions 

Prepare the Dressing

  • In a medium bowl, whisk together the apple cider vinegar, honey, Greek yogurt, mayonnaise, pepper, and salt.
  • Whisk until the dressing is completely smooth and well combined. Set it aside.

Get Your Salad Ingredients Ready

  • Make sure your bacon is cooked until crispy and then chopped into small pieces.
  • Chop your broccoli florets into small, bite-sized pieces. You want them small enough to be easy to eat in a salad.
  • Dice the red onion into very small pieces.

Assemble the Salad

  • In a large mixing bowl, combine the chopped, crispy bacon, diced broccoli florets, dried cranberries, finely diced red onion, and sunflower seeds.

Dress and Serve!

  • Pour the creamy dressing you made over all the salad ingredients in the large bowl.
  • Toss everything gently until all the ingredients are well coated with the dressing.
  • You can serve this salad right away, or chill it in the refrigerator for at least 30 minutes to let the flavors meld together.
