Grain Free Date and Chocolate Chip Muffins

Ingredients 

  • 1 cup blanched almond flour
  • 1 tablespoon coconut flour
  • teaspoon baking soda
  • pinch of salt
  • 2 tablespoons maple syrup
  • ½ cup unsweetened vanilla almond milk, i used homemade
  • 2 tablespoons ghee, melted
  • 1 egg
  • 1 teaspoon vanilla extract
  • ¼ cup mini chocolate chips
  • 3 dates, pitted & chopped

Instructions 

  • Preheat oven to 350 degrees. In a medium bowl combine almond flour, coconut flour,
  • Baking soda, salt, maple syrup, almond milk, ghee, egg and vanilla extract. Once the batter is evenly combined, add in the chocolate chips and chopped dates.
  • Spray a muffin tin with some coconut oil spray and scoop batter into the tins about ¾ of the way up. (about 8 muffins) Bake for 20-25 minutes or until slightly browned around the edges.
