Prevent your screen from going dark
Preheat your oven to 375°F.
Cook the bacon in a pan over medium heat until crispy. Place it on paper towels to cool, then chop it.
Cook the onion in the bacon grease for 5-7 minutes, until soft.
In a large bowl, mix together almond flour, baking powder, salt, pepper and eggs.
Stir in the cooked bacon, onion, and ¾ cup of shredded cheese.
Line a baking sheet with parchment paper.
Scoop the mixture into balls on the prepared baking sheet and flatten them slightly.
Top with the remaining cheese (or extra if you like).
Bake for about 13-15 minutes, or until the biscuits are set.
Enjoy warm or store them in an airtight container in the fridge to reheat later!
