- 1 pound ground turkey
- ¼ cup almond flour
- 1 egg
- 1 teaspoon garlic powder
- 1 teaspoon dried dill
- 1 teaspoon dried oregano
- 1 teaspoon salt
- ½ teaspoon pepper
- ¼ cup chopped sundried tomatoes (in oil, drained)
- ¼ cup minced red onion
- ¼ cup chopped sliced black olives
- Topping:
- ¼ cup tahini
- 1 tablespoon apple cider vinegar
- 2 tablespoons water
- 1 teaspoon garlic powder
- salt to taste
- pepper to taste
- Some sliced black olives
Instructions
- Preheat oven to 400 degrees.
- In a large bowl combine turkey, almond flour, egg, garlic powder, dried dill, oregano, salt, pepper, sundried tomatoes, red onion and olives. Mix together with clean hands until evenly combined.
- Ball up all of the meat mixture and place on a foil lined baking sheet, then form it into a loaf shape, about 8 inches x 4 inches in shape.
- Bake for 30 minutes.
- While the meatloaf cooks make your tahini topping.
- In a small bowl combine tahini, apple cider vinegar, water and garlic powder. Add some salt and pepper to taste.
- Once meatloaf is done cooking, let it sit for about 5 minutes, then spread the tahini sauce over the top. Sprinkle with some slices olives and enjoy!
