Mango Jicama Coleslaw

Ingredients

  • 10 oz green cabbage
  • 1 mango, julienned
  • ½ jicama root, julienned
  • 1/2 cup thinly sliced red onion
  • 2 tablespoons mayonnaise
  • 2 tablespoons Nakano Mango Seasoned Rice Vinegar
  • 1 lime
  • salt and pepper

Instructions

  1. In a large bowl combine cabbage, mango, jicama and red onion. In a small bowl combine mayonnaise, Nakano Mango Seasoned Rice Vinegar and the juice and zest of 1 lime. Salt and pepper to taste. Pour over coleslaw ingredients and toss to coat. Serve as a side or on top of a bbq chicken or pork sandwich!
