  • 2 green onions, thinly sliced
  • 1/2 cup diced green pepper
  • 1 cup cooked quinoa
  • 1 cup Greek yogurt
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp salt
  • 1/2 cup chopped salted almonds or pistachios (optional)

Instructions

  • Combine ingredients: In a large bowl, mix chicken, celery, green onions, green pepper, and quinoa.
  • Prepare dressing: In a small bowl, whisk together Greek yogurt, lemon juice, honey, and salt until well combined.
