Description
These Healthy Hummingbird Muffins are gluten free, dairy free and packed with applesauce, banana, pineapple, pecans and spices!
Ingredients

- 2 cups almond flour
- ½ c arrowroot flour
- 3/4 cup coconut sugar
- 1/2 teaspoon baking soda
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon ground cardamom
- Pinch grated nutmeg
- 1 egg
- 1/4 cup applesauce
- 1/2 cup mashed banana (about 1 large bananas)
- ½ cups crushed pineapple, drained
- 1 teaspoon pure vanilla extract
- 1/2 cup pecans, chopped
Instructions
- Preheat oven to 350 degrees.
- Mix almond flour, arrowroot flour, coconut sugar, baking soda, cinnamon, salt and nutmeg.
- Add egg, applesauce, mashed banana, pineapple, vanilla extract and pecans and stir to combine
- Scoop into muffin tins and bake for 20-25 min or until a toothpick inserted comes out clean.
Notes
- Optional: Mix 1 tbsp honey with 1/2 tbsp hot water and brush honey syrup over muffins when they come out of the oven!
