- 1 cup blanched almond flour
- 1 tablespoon coconut flour
- ⅛ teaspoon baking soda
- pinch of salt
- 2 tablespoons maple syrup
- ½ cup unsweetened vanilla almond milk (i used homemade)
- 2 tablespoons ghee, melted
- 1 egg
- 1 teaspoon vanilla extract
- ¼ cup mini chocolate chips
- 3 dates, pitted & chopped
Instructions
- Preheat oven to 350 degrees. In a medium bowl combine almond flour, coconut flour,
- Baking soda, salt, maple syrup, almond milk, ghee, egg and vanilla extract. Once the batter is evenly combined, add in the chocolate chips and chopped dates.
- Spray a muffin tin with some coconut oil spray and scoop batter into the tins about ¾ of the way up. (about 8 muffins) Bake for 20-25 minutes or until slightly browned around the edges.
