- 1 ½ cup chopped walnuts
- ½ cup slivered almonds
- ½ cup chopped pecans
- 3/4 cup almond flour
- ½ teaspoon salt
- 1 tablespoon chia seeds
- ¼ cup coconut oil, melted
- ¼ cup cashew butter (or any nut butter works!)
- 2 tablespoons coconut sugar
- 2 tablespoons honey
- 1 teaspoon vanilla
- Flax egg – 1 tablespoon ground flax seed + 2 ½ tablespoons water (let sit for 5 minutes)
Instructions
- Preheat oven to 350 degrees and line a baking sheet with parchment paper.
- Combine walnuts, almonds, pecans, almond flour, salt and chia seeds in a large bowl.
- In another bowl combine coconut oil, cashew butter, coconut sugar, honey, vanilla and flax egg. Pour wet ingredients over the nuts and stir well to combine.
- Pour mixture on the baking sheet with parchment paper and press into one even layer. It will look like one large cookie!
- Bake for 13 minutes or until lightly browned all over. Remove from the oven and let cool completely.
- Once cool, Break into whatever size chunks you like! Enjoy on a smoothie bowl, as a snack by the handful or in a bowl with some berries and almond milk!
