- ½ cup butter, softened
- ⅔ cups coconut sugar
- 1 egg
- 1 tsp vanilla extract
- 1 cup almond Flour
- ½ tsp baking soda
- ¾ tsp cinnamon
- ½ tsp nutmeg
- ½ tsp ginger
- ¼ tsp allspice
- ½ tsp sea salt
- 1 ½ cup old-fashioned oats
- ½ cup dried cranberries
- ½ cup chopped pecans
- ½ cup mini chocolate chips
Instructions
- Preheat oven to 350 degrees.
- Combine butter and coconut sugar in a mixer on med speed, mix for 3-5 min,
- Add egg and mix well, add vanilla and continue to mix.
- In a separate bowl add the almond flour, baking soda and spices
- Add the dry ingredients to the wet and mix until just incorporated.
- Stir in oats, cranberries, pecans and chocolate chips.
- Scoop cookie dough into 24 balls between 2 parchment paper lined baking sheets. Bake for 10-12 min or until done!
