- 1 pound ground turkey
- 1 egg
- ¼ cup almond flour
- 1 teaspoon chopped fresh thyme
- 1 teaspoon chopped fresh rosemary
- 1 teaspoon salt
- ¼ teaspoon black pepper
- ½ cup chopped carrots
- ½ cup chopped green beans
- 1 cup peeled and chopped russet potatoes
- 1 tablespoon avocado oil
- pinch of salt
Instructions
- Preheat oven to 400 degrees.
- In a large bowl combine turkey, egg, almond flour, thyme, rosemary, salt and pepper.
- Place a large skillet over medium high heat and add oil to the pan. Then add carrots, green beans and potatoes. Cook for 5-7 minutes or until they start to soften and brown slightly and season with a pinch of salt.
- Set aside ½ cup of the cooked vegetables and add the rest to the turkey mixture. Combine all of the ingredients in the bowl with your hands or a wooden spoon until equally combined.
- Form turkey mixture into a loaf shape on a foil lined baking sheet. Top the loaf wit the remaining ½ cup of vegetables.
- Bake for 30 minutes and enjoy!
