Turkey Pot Pie Meatloaf {Whole30}

  • 1 pound ground turkey
  • 1 egg
  • ¼ cup almond flour
  • 1 teaspoon chopped fresh thyme
  • 1 teaspoon chopped fresh rosemary
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup chopped carrots
  • ½ cup chopped green beans
  • 1 cup peeled and chopped russet potatoes
  • 1 tablespoon avocado oil
  • pinch of salt

Instructions

  • Preheat oven to 400 degrees.
  • In a large bowl combine turkey, egg, almond flour, thyme, rosemary, salt and pepper.
  • Place a large skillet over medium high heat and add oil to the pan.  Then add carrots, green beans and potatoes.  Cook for 5-7 minutes or until they start to soften and brown slightly and season with a pinch of salt.
  • Set aside ½ cup of the cooked vegetables and add the rest to the turkey mixture.  Combine all of the ingredients in the bowl with your hands or a wooden spoon until equally combined.
  • Form turkey mixture into a loaf shape on a foil lined baking sheet. Top the loaf wit the remaining ½ cup of vegetables.
  • Bake for 30 minutes and enjoy!
