Painkiller Cocktail

So remember how I told you that it is still pretty warm around these parts?  Well that’s why this week is all about drinks!  I saw this Painkiller cocktail on one of my favorite blogs “Shutterbean” awhile ago and took a snapshot of it on my phone.  Every time I scroll through my camera roll I would see it and wish I had the ingredients on hand.  Finally I came to my senses and popped for the amazing Myers Dark Rum.  This stuff is redic.  Any drink with dark rum in it is dangerous!  Add some tasty juices and you have yourself a satisfying cocktail that tastes nothing like booze.  This is a wonderful problem.  I also used Trop 50 because I wanted to save a few calories as juices can be very sugary.  Now that fall has begun I should probably be posting only hot toddies, but those will come soon enough.  For now – get in this Painkiller!

Simple and oh so good.  I would say this is kind of like a Mai Tai’s cousin.

That coconut creme is no joke.  Go and make these now!  Unless you are reading this before noon……. at least wait till then.

Painkiller Cocktail


Ingredients

Scale
  • 2 oz. dark rum
  • 4 oz. pineapple juice
  • 1 oz. orange juice
  • 1 oz. sweetened coconut cream (I used Coco Lopez)
  • 5 ice cubes
  • nutmeg

Instructions

  1. In a cocktail shaker or regular glass, combine rum, pineapple juice, orange juice, coconut cream and ice cubes. Shake or stir for about 10 seconds and pour in a tall glass. Top with nutmeg.
