Double Peanut Butter Cookie Cups

These cookies were inspired by my Peanut Butter Cookie Cups.  A co-worker is a Peanut butter fanatic and thought that peanut butter buttercream on peanut butter cookies would be divine.  Topped with a mini reese’s, these little bites are delish.  I whipped up the same peanut butter cookies from the previous PB cookie post, and scooped them into mini muffin pans.

Once they bake they for about 8-9 minutes, they will be golden brown.  They will also slightly cave down in the middle, but you will need to press down a little more to make the cup shape.  Then I whipped up the same peanut butter buttercream from my PB & C cake, which is just the vanilla buttercream I always use, with 1/2 cup peanut butter added.  And I also only did a half batch of buttercream because I didn’t need a whole batch.  Once the cookies cooled, I put the buttercream in a piping bag and filled the cookies.

Then just take a mini reese’s peanut butter cup and place it on top.  Too cute!!
